Choosing Sashimi Grade Fish:

• When choosing fish for sashimi ensure you use saltwater fish instead of freshwater fish.

• Make a point to ask the seller if it is “Sashimi Grade” fish

• Fresh fish actually shouldn’t smell ‘fishy’ if it smells fishy or really smelly then it’s not fresh.

• When buying a whole fish, the skin should be moist & slippery, the eyes bright & clear.

• When buying ready cut fillets, there should be even colouring, the flesh should be firm & moist
